This is inspired by one of my mentors, Chef Troisgros in France.
We use our own grown Organic Moroccan mint- Verbena, which we cold infuse overnight in fresh cream, we mix in 54% Belgian dark chocolate, we hand roll them and dip them one at the time in 72% dark chocolate, they are then dusted in Valrhona unsweetened cocoa powder, the result is a thin snap of the outer shell for an intense initial taste, then the smooth ganache with the lingering herbal notes of the verbena, this simple combination of chocolate and herb is pure delight!
