The shell is made using almond, egg white and yes! Cocoa paste which is 100% chocolate. The filling is made by mixing fresh cream with bittersweet chocolate plus the addition of cocoa paste. The result is an intense chocolate flavor. The crunchy top, as thin as an egg shell gives way to a chewy almond texture.

A mouthful of chocolate!

These are DELICIOUS! SO chocolaty! I am used less-chewy shell, but didn't mind these. Definitely follow instructions and allow to sit out of the fridge for 30 minutes before eating - makes a huge difference. They arrived almost completely in tact. I was warned about potential breakage in advance and agreed that I didn't care, so I expected much worse. It was really fine, with minimal damage. I also ordered Pates de Fruits which are REALLY good!
