The tradition of Pâte de Fruits dates back to the Middle Ages (around the 10th century) in the region of Auvergne in France. Cooking the fruit to a thick paste was a method of preserving the fruits beyond the season. Their taste quickly appealed the connoisseurs, and the Pâte de Fruits furnished the royal tables. The oldest are apple-based, and the most popular in French history are apricot Pâte de Fruits. For centuries, the recipe was kept a secret by the monasteries, before crossing the threshold of the most renowned pastry shops.
